I always loved when my mom would make this comforting casserole, it is so yummy. I now make it for my grandchildren.

Ingredients

  • 16 ounces corkscrew macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon each, salt and pepper
  • 3 cups milk, i used fat-free
  • 2 cups shredded swiss cheese, divided, i used reduced-fat
  • 3 - 6 oz cans tuna in water, drained, flaked
  • 2 large heirloom tomatoes, cut into 1/4"-thick slices
  • 1/2 cup breadcrumbs, i used italian style, but you can use plain

How To Make moms tuna melt casserole.

  • Step 1
    Heat oven to 400. Spray a 9" x 13" casserole dish w/ cooking spray. In saucepan, over low heat, melt butter. Stir in flour, salt and pepper. Stirring, cook 1 mins.
  • Step 2
    Spoon mix into casserole dish. Arrange tomatoes on top. Sprinkle w/ breadcrumbs. Cover dish w/ foil and bake 20 mins. Uncover and bake 10 more mins, or until bubbly.
