Fish "meze" appetizers especially the fried fish or squid are among the most popular during the summer months anywhere in Greece. Always accompanied with a glass of ouzo mostly. But beer or wine are also good. Because these fish are tiny and crispy, kids don't see them as fish:) and love them as they would potato chips. Of course without the ouzo:) KALI OREXI! ENJOY!

Ingredients
- 2 pounds fresh anchovies, sardines or other small fish
- - oil for frying
- - a/p flour for dredging fish
- - the juice of one lemon
- - salt & pepper
How To Make greek fried fish appetizer

Step 1Clean fish by removing heads & innards. Wash and set aside in a strainer to drain any liquid.

Step 2Pour a generous amount of oil into a frying pan. Dredge the fish with salted & pepper flour. Shake them to remove any surplus and then place in the hot oil, that has reached a boiling point, to fry. Fry in batches until crisp.

Step 3Drain on absorbent paper til ready to serve. Garnish with lemon wedges. KALI OREXI! ENJOY!
