It's the start of a new year, and I've tried a number of way to eat healthier. I'm just not finding recipes that make me say WOW. Well, after much disapointment in myself for "failing juicing", I want A nice meal for the evening. I also want to stick to Clean Eating. I thought of this out of desperation. So let's give it a go.

Ingredients

Add to Grocery List

  • 2 medium
    orange roughy filets
  • pinch
    kosher salt or sea salt
  • pinch
    white pepper
  • dash(es)
    garlic powder
  • pinch
    ground cumin
  • ·
    olive oil sray to coat foil
  • FOR SAUCE

  • YOU WILL NEED A BLENDER

  • 1 bunch
    cilantro, fresh with stims (ends cut off)
  • 1/2 c
    yogurt, greek low-fat, plain
  • 1/2
    lemon juice
  • 1/4 tsp
    garlic powder
  • 2
    green onion
  • 1/8 c
    olive oil
  • ·
    salt and pepper
  • dash(es)
    cayenne pepper to taste
  • PREHEAT OVEN AT 325 DEGREES F

How to Make Clean Eating-Orange Roughy w/ Cilantro Sauce

Step-by-Step

  1. In a medium piece of foil coat with nonstick spray .
  2. Place your fish side by side, and season to your taste with spices.
    *(white pepper is spicer the black pepper)
  3. Make a foil pocket to cook fish.
    Bring both side together, and roll downward until sealed. now do the same with each end.
  4. Now do the same with each end. Press to seal. Place in sturdy pan, and place in oven.
  5. TIME TO MAKE THE SAUCE !

    In a blender or bullet, load all ingredients in. Blend well
    TASTE.........make adjustments Bleand and TASTE AGAIN
    Keep at room temp. for now..
  6. After 15min. remove fish from oven, DO NOT OPEN FOIL FOR 5 MIN.
  7. After 5 min. OPEN and slather one sauce, You know you want more. Serve over a bed of Quinoa
