Ingredients
- 2 teaspoons olive oil
- 2 - chicken breasts, boneless and skinless
- 1 tablespoon thai red curry paste
- 2 cups yellow squash, sliced
- 1 - red bell pepper, diced
- 1 cup onion, diced
- 1 - can coconut milk
- 1 - jalapeno, diced
- 2-3 tablespoons butter
- 2 cups cooked rice, optional
How To Make spicy coconut chicken curry

Step 1Heat oil in large pot over med-high heat. Add the chicken and onion, cook, stirring for about 5 min. Mix in the curry paste and remaining veggies, cook, stirring for a few min. Pour coconut milk into the pot and boil. Add butter and simmer over med. heat until butter melts, chicken is fully cooked. Serve with rice.
