Ingredients

  • 1 tablespoon olive oil
  • 2 medium onions, thin sliced
  • 1/4 teaspoon sea salt
  • 1 / 2 cups mushrooms, thin sliced
  • 1 teaspoon fresh thyme, or 1/ 2 dried
  • 4 cups chicken stock
  • 2 teaspoons balsamic vinegar
  • 5 ounces chopped kale
  • 6 ounces smoked chicken, chopped to bite-sized pieces
  • 1&1 / 2 cups wild rice, cooked
  • - salt and pepper to taste

    Step 1
    Heat olive oil in a pot over medium heat, then add onion and salt. Cook stirring occasionally over medium low heat until onions begin to carmelize. 20 - 25 minutes.

    Add mushrooms and thyme and continue to cook 5 minutes. Add the chicken stock and vinegar and bring to a boil

    Step 3
    Stir in chicken, kale, and rice. Bring to a boil, reduce heat to medium low and simmer 5- 10 minutes. Season to taste with salt and pepper.
