- 1 - frying chicken 3 to 3 1/2 lbs .cut up
- 1 - egg
- 2 tablespoons milk
- 1 cup instant potatoes ( flaked )
- 1 teaspoon garlic salt
- 1/4 cup grated parmesan cheese
- 1/4 cup butter

Step 1Heat oven to 400 degrees

Step 2Wash chicken pieces, pat dry and set aside.

Step 3Beat egg and milk in a bowl.

Step 4In another bowl mix potato flakes and Parmesan cheese.

Step 5Roll chicken first in egg mixture, then potato mixture

Step 6Melt butter in a shallow baking pan. Roll coated chicken pieces in butter then place skin side up in the pan.

Step 7Bake 45 to 50 minutes or until juices from thighs run clear when pierced with a fork.
