    (3oz) chicken breast halves, skinned
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 2 Tbsp
    prepared mustard
  • 1
    egg
  • 1/4 c
    plus two tablespoons grated parmesan cheese
  • 1/4 c
    soft breadcrumbs
  • ·
    vegetable cooking spray

How to Make Healthy Mustardy Oven-Baked Chicken

Step-by-Step

  1. Sprinkle chicken breast halves, with salt and pepper.
  2. Combine mustard and egg, beating with a wire wisk until well blended. Combine cheese and Breadcrumbs; stir well.
  3. Dip chicken in egg mixture, then dredge in breadcrumb mixture. Let stand at room temperature on wax paper for 10 minutes for coating
  4. Transfer chicken to a rack of a roasting pan coated with cooking spray. Bake at 400 degrees f for 40 minutes or until chicken is done and coating is lightly browned. serve on serving platter with parsley lined around for garnish
