Ingredients

  • 8 - (3oz) chicken breast halves, skinned
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons prepared mustard
  • 1 - egg
  • 1/4 cup plus two tablespoons grated parmesan cheese
  • 1/4 cup soft breadcrumbs
  • - vegetable cooking spray

How To Make healthy mustardy oven-baked chicken

  • Step 1
    Sprinkle chicken breast halves, with salt and pepper.
  • Step 2
    Combine mustard and egg, beating with a wire wisk until well blended. Combine cheese and Breadcrumbs; stir well.
  • Step 3
    Dip chicken in egg mixture, then dredge in breadcrumb mixture. Let stand at room temperature on wax paper for 10 minutes for coating
  • Step 4
    Transfer chicken to a rack of a roasting pan coated with cooking spray. Bake at 400 degrees f for 40 minutes or until chicken is done and coating is lightly browned. serve on serving platter with parsley lined around for garnish
