1Sprinkle chicken breast halves, with salt and pepper.
2Combine mustard and egg, beating with a wire wisk until well blended. Combine cheese and Breadcrumbs; stir well.
3Dip chicken in egg mixture, then dredge in breadcrumb mixture. Let stand at room temperature on wax paper for 10 minutes for coating
4Transfer chicken to a rack of a roasting pan coated with cooking spray. Bake at 400 degrees f for 40 minutes or until chicken is done and coating is lightly browned. serve on serving platter with parsley lined around for garnish
