fred's chicken rub
This is my own version of a dry rub for chicken. I tried different rubs and they just didn't do it for me, so I decided to come up with my own. I don't know if it's that different from commercial rubs but I know it's made with fresh herbs and spices, and that makes a difference.

About 10 to 15 lbs. of chicken
Ingredients
- 2 tablespoons non-iodized salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon thyme, dried, ground
- 1 teaspoon sage, dried, rubbed
- 1 teaspoon black pepper, ground
How To Make fred's chicken rub

Step 1Put all ingredients in a pint canning jar. Shake to combine well.

Step 2To use the rub first pat the chicken dry with a paper towel. Lightly brush or spray with olive oil. Next, sprinkle the dry rub on and lightly rub it into the oiled chicken.

Step 3Now you can cook your chicken as usual. You can bake it, (350deg.) broil it, or bar-b-q it. Just before it's done, put your favorite B-B-Q sauce on it. I use my own Kansas City Style sauce on it. You can find that recipe on Just-a-pinch Recipe Club. You can join for free.
