This is my own version of a dry rub for chicken. I tried different rubs and they just didn't do it for me, so I decided to come up with my own. I don't know if it's that different from commercial rubs but I know it's made with fresh herbs and spices, and that makes a difference.

method Barbecue
yield About 10 to 15 lbs. of chicken

Ingredients

  • 2 tablespoons non-iodized salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon thyme, dried, ground
  • 1 teaspoon sage, dried, rubbed
  • 1 teaspoon black pepper, ground

How To Make fred's chicken rub

  • Step 1
Put all ingredients in a pint canning jar. Shake to combine well.
  • Step 2
To use the rub first pat the chicken dry with a paper towel. Lightly brush or spray with olive oil. Next, sprinkle the dry rub on and lightly rub it into the oiled chicken.
  • Step 3
Now you can cook your chicken as usual. You can bake it, (350deg.) broil it, or bar-b-q it. Just before it's done, put your favorite B-B-Q sauce on it. I use my own Kansas City Style sauce on it. You can find that recipe on Just-a-pinch Recipe Club. You can join for free.
