Ingredients For fireman bob's wonderful wacky smacky chili revised

  • 1 lb
    chicken, cut into bite size pieces
  • 1 lb
    ground turkey
  • 1 lb
    pork sausage, spicy hot, bulk
  • 1 lb
    pork belly, slab, cut into bite size pieces
  • 1 lb
    smoked bacon, cut into bite size pieces
  • 4 clove
    garlic, finely chopped
  • 1 lg
    yellow onion, chopped
  • 1 sm
    anaheim, seeded and chopped
  • 1 sm
    poblano peppers, seeded and chopped
  • 1 sm
    serrano pepper, seeded and chopped
  • 1 sm
    chipotle peppers, seeded and chopped
  • 1 sm
    ancho peppers, seeded and chopped
  • 4 stalk
    celery, chopped
  • 1 c
    green peppers, seeded and chopped
  • 1 c
    red peppers, seeded and chopped
  • 1 bunch
    cilantro, chopped
  • 1 bunch
    green onions chopped
  • 1 can
    black olives, drained and chopped
  • 1 can
    large kidney beans, with liquid
  • 1 can
    large black beans, with liquid
  • 2 jar
    large fire roasted red tomatoes, diced
  • 1 can
    large tomato paste, gives richness
  • 1 1/2 c
    fresh lime juice
  • the zest from all the limes
  • 1/4 c
    red pepper flakes, crushed
  • 2 c
    white beans, cooked
  • 3 c
    chili powder
  • 1 Tbsp
    cumin
  • 1/4 c
    fennel seeds, roasted first and crushed
  • 4 Tbsp
    paprika
  • *** chicken stock as needed, see directions. ***
  • 2 Tbsp
    savory, crushed
  • 2 Tbsp
    rosemary, dried and crushed
  • 2 Tbsp
    basil, dried and crushed

How To Make fireman bob's wonderful wacky smacky chili revised

    In a Large skillet, first brown the pork belly, smoked bacon and pork sausage. Remove from skillet and set aside. In the pork fat/bacon drippings, brown the chicken and turkey. Drain and set aside.

    Chop all Peppers, onions, green onions, celery, cilantro, black olives, and set aside. In the LARGEST Stock Pot or Dutch Oven, combine kidney beans, black beans, fire roasted tomatoes, tomato paste, lime juice, lime zest, red pepper flakes, white beans, chili powder, cumin, rosemary, savory, basil and paprika. Simmer for 10 minutes on medium heat stirring constantly.

    Add the Pork Belly, Pork Sausage, Smoked Bacon, and Chicken. Turn the heat down to low and simmer for 8 hours, watching the " liquids ". *** Add Chicken Stock as needed *** ENJOY !!!!
