Ingredients
- 1 pound chicken, cut into bite size pieces
- 1 pound ground turkey
- 1 pound pork sausage, spicy hot, bulk
- 1 pound pork belly, slab, cut into bite size pieces
- 1 pound smoked bacon, cut into bite size pieces
- 4 cloves garlic, finely chopped
- 1 large yellow onion, chopped
- 1 small anaheim, seeded and chopped
- 1 small poblano peppers, seeded and chopped
- 1 small serrano pepper, seeded and chopped
- 1 small chipotle peppers, seeded and chopped
- 1 small ancho peppers, seeded and chopped
- 4 stalks celery, chopped
- 1 cup green peppers, seeded and chopped
- 1 cup red peppers, seeded and chopped
- 1 bunch cilantro, chopped
- 1 bunch green onions chopped
- 1 can black olives, drained and chopped
- 1 can large kidney beans, with liquid
- 1 can large black beans, with liquid
- 2 jars large fire roasted red tomatoes, diced
- 1 can large tomato paste, gives richness
- 1 1/2 cups fresh lime juice
- - the zest from all the limes
- 1/4 cup red pepper flakes, crushed
- 2 cups white beans, cooked
- 3 cups chili powder
- 1 tablespoon cumin
- 1/4 cup fennel seeds, roasted first and crushed
- 4 tablespoons paprika
- - *** chicken stock as needed, see directions. ***
- 2 tablespoons savory, crushed
- 2 tablespoons rosemary, dried and crushed
- 2 tablespoons basil, dried and crushed

Step 1In a Large skillet, first brown the pork belly, smoked bacon and pork sausage. Remove from skillet and set aside. In the pork fat/bacon drippings, brown the chicken and turkey. Drain and set aside.

Step 2Chop all Peppers, onions, green onions, celery, cilantro, black olives, and set aside. In the LARGEST Stock Pot or Dutch Oven, combine kidney beans, black beans, fire roasted tomatoes, tomato paste, lime juice, lime zest, red pepper flakes, white beans, chili powder, cumin, rosemary, savory, basil and paprika. Simmer for 10 minutes on medium heat stirring constantly.

Step 3Add the Pork Belly, Pork Sausage, Smoked Bacon, and Chicken. Turn the heat down to low and simmer for 8 hours, watching the " liquids ". *** Add Chicken Stock as needed *** ENJOY !!!!
