crispy & spicy chicken breast strips

My favorite way to eat these are with country gravy... but a good honey mustard or a chipotle ranch is certainly delicious too. Omit the cayenne for a non spicy option for the kids :)

Ingredients

  • 4 - chicken breasts, boneless and skinless
  • 4 cups italian bread crumbs
  • 2 tablespoons chefs seasoning no salt
  • 2 tablespoons cayenne pepper
  • 2 teaspoons kosher salt
  • 2 - eggs, beaten
  • - canola oil for frying

How To Make crispy & spicy chicken breast strips

  • Step 1
    Cut chicken breast in half, longwise, as if you were butterflying but cut completely apart.
  • Step 2
    Cut pieces into strips.
  • Step 3
    Mix dry ingredients together in shallow dish and beat eggs in another dish.
  • Step 4
    Dip chicken strips into beaten egg.
  • Step 5
    Then roll chicken in the bread crumb mixture while turning and pressing the crumbs onto the strips firmly.
  • Step 6
    add canola oil to frying pan about 1/4 - 1/2 inch deep. Heat on med high then add chicken.
  • Step 7
    Cook on both sides until nice dark golden brown about 3-5 minutes per side.
  • Step 8
    Drain on paper towel and serve with your favorite dipping sauce or country gravy. Yummilicious!
