My family loves this chicken with fresh cranberries.I served with vegetable fried rice and honey chipotle sweet potatoes.It is heavenly good.

Ingredients

  • 3-4 cups boneless,skinless chicken breast halves
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt and pepper
  • 1 1/2 cups fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 1 cup water
  • 1 tablespoon red wine vinigar
  • 1/4 teaspoon nutmeg
  • - butter and olive oil to fry the chicken

How To Make cranberry chicken

  • Step 1
    Combine flour,salt and pepper;dredge chicken. In a skillet,melt butter and oil.Brown chicken on both size,remove from skillet and set aside. In the same skillet add cranberries,water ,brown sugar nutmeg and vinegar.
  • Step 2
    Cook and stir until the cranberries burst,about 10 minutes.Return chicken to skillet,cover and simmer 30 minutes,until chicken is tender,basting occasionally with the sauce.
  • Step 3
    Serve with rice,sweet potatoes,veges.Enjoy.
