These make a great italian-style meal, very healthy and a great use of your garden zucchini.

Ingredients

  • 2 large zucchini, ends trimmed
  • 3 tablespoons olive oil
  • 2 - italian-style chicken sausages
  • 2 teaspoons crushed red pepper flakes
  • - salt and pepper
  • 1/2 - sweet onion, chopped
  • 3 teaspoons minced garlic
  • 1 - 14 oz can whole peeled tomatoes, divided, chopped
  • 1/2 cup italian style bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped basil

How To Make chicken sausage stuffed zucchini

  • Step 1
    Heat oven to 375. Cut zucchini lenghtwise in 1/2. Using a spoon, scoop out the flesh. Heat oil in lg skillet over medium heat.
  • Step 2
    Cook sausages, breaking up the meat as you cook, until browned. Sprinkle w/ red pepper flakes, season w/ salt and pepper. Stir in onion and galric, cook 5 mins, stirring often.
  • Step 3
    Spoon sausage mix into a bowl. Stir in tomatoes, bread crumbs,, parmesan cheese and basil. Stuff zucchini shells w/ stuffing. Place on a baking sheet and bake 30 mins.
