Ingredients
- 2 large zucchini, ends trimmed
- 3 tablespoons olive oil
- 2 - italian-style chicken sausages
- 2 teaspoons crushed red pepper flakes
- - salt and pepper
- 1/2 - sweet onion, chopped
- 3 teaspoons minced garlic
- 1 - 14 oz can whole peeled tomatoes, divided, chopped
- 1/2 cup italian style bread crumbs
- 1/4 cup grated parmesan cheese
- 1 tablespoon chopped basil
How To Make chicken sausage stuffed zucchini

Step 1Heat oven to 375. Cut zucchini lenghtwise in 1/2. Using a spoon, scoop out the flesh. Heat oil in lg skillet over medium heat.

Step 2Cook sausages, breaking up the meat as you cook, until browned. Sprinkle w/ red pepper flakes, season w/ salt and pepper. Stir in onion and galric, cook 5 mins, stirring often.

Step 3Spoon sausage mix into a bowl. Stir in tomatoes, bread crumbs,, parmesan cheese and basil. Stuff zucchini shells w/ stuffing. Place on a baking sheet and bake 30 mins.
