These make a great italian-style meal, very healthy and a great use of your garden zucchini.

    zucchini, ends trimmed
  • 3 Tbsp
    olive oil
  • 2
    italian-style chicken sausages
  • 2 tsp
    crushed red pepper flakes
  • ·
    salt and pepper
  • 1/2
    sweet onion, chopped
  • 3 tsp
    minced garlic
  • 1
    14 oz can whole peeled tomatoes, divided, chopped
  • 1/2 c
    italian style bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1 Tbsp
    chopped basil

How to Make Chicken sausage stuffed zucchini


  1. Heat oven to 375. Cut zucchini lenghtwise in 1/2. Using a spoon, scoop out the flesh. Heat oil in lg skillet over medium heat.
  2. Cook sausages, breaking up the meat as you cook, until browned. Sprinkle w/ red pepper flakes, season w/ salt and pepper. Stir in onion and galric, cook 5 mins, stirring often.
  3. Spoon sausage mix into a bowl. Stir in tomatoes, bread crumbs,, parmesan cheese and basil. Stuff zucchini shells w/ stuffing. Place on a baking sheet and bake 30 mins.
