Ingredients

  • 6 small boneless skinless chicken breasts
  • 6 slices deli fresh smoked ham
  • 6 slices extra thin swiss cheese
  • 2 cups tightly packed baby spinach leaves
  • 1 - red pepper, cut into strips
  • 1 can (10-3/4 oz.) cream of chicken soup
  • 1/2 cup sour cream
  • 1 tablespoon grey poupon dijon mustard
  • 1 cup croutons, coarsely crushed

How To Make chicken cordon bleu casserole

  • Step 1
    Place the chicken breasts in a 13x9" sprayed baking dish; top with ham, cheese, spinach and peppers.
  • Step 2
    In a medium bowl, mix soup, sour cream and mustard until blended. Spoon over ingredients in baking dish; spread to evenly cover all ingredients. Top with crushed croutons.
  • Step 3
    Bake in a preheated 400º oven for 25 minutes or until chicken is done and remaining ingredients are heated through. Serve over hot cooked rice.
