How to Make Chicken/Bacon/Cheese Batard with Avocado Sauce

Step-by-Step

  • 1Whisk or use a food processor fitted with an S-Blade to mix all the dressing ingredients together until smooth, and then reserve.
  • 2Cut the batard in half, and the split lengthwise to make two sandwiches.
  • 3Cut the chicken breast in half, lengthwise.
  • 4Add the oil and butter to a sauté pan, and bring up to medium heat.
  • 5Salt and pepper the chicken breasts, to taste, and add to the pan.
  • 6Sauté 2 to 3 minutes per side, or until cooked through, and slightly browned.
  • 7Remove from the pan, but reserve the oil and butter from the pan.
  • 8Place a rack in the upper position, and set your oven to broil
  • 9Use a pastry brush to brush the butter/oil from the pan onto the cut sides of the four pieces of the batard.
  • 10Place into the oven on a baking sheet, oil/butter side up, and broil until they begin to brown.
  • 11Remove from oven, but leave the broiler on.
  • 12Place a chicken breast on each of the bottom portions of the cut batard.
  • 13Lay two strips of bacon over each of the chicken breasts.
  • 14Add the cheddar cheese over the bacon.
  • 15Return to the broiler until the cheese is bubbly, and begins to brown.
  • 16While broiling, spread some of the dressing over the top portions of the batards.
  • 17Remove the bottoms portions from the oven, garnish with lettuce and tomatoes, salt, and pepper, and serve while still warm.
  • 18Keep the faith, and keep cooking.
