Ingredients
- 3 - chicken breast halves, skinned and boned
- 2 tablespoons olive oil, extra virgin
- 2 1/2 cups fresh mushrooms, sliced
- 1/3 cup minced shallots
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon dried, whole tarragon
- 1/2 cup white wine
- 2 tablespoons dijon mustard
- 2 teaspoons corn starch
- 1/2 teaspoon salt
- - fresh ground pepper to taste
How To Make chicken a'la france

Step 1Place each piece of chicken between plastic wrap and pount to 1/4-inch thickness. Cut each piece in half to make two pieces. Sprinkle chicken with salt and pepper.

Step 2Heat oil in a large skillet. Cook chicken until barely done. Set on a plate and keep warm.

Step 3Saute mushrooms and shallots and combine mustard, wine, herbs, pepper and cornstarch. Wisk until smooth.

Step 4Return chicken to the pan with shallots and mushrooms. Pour sauce over chicken. Simmer uncovered for 5 minutes.
