atkins induction friendly "fiesta chicken"

I am not sure if this is already a known recipe but I came up with this myself and I have made it for several family members and it is a hit!!! it is soooooo tasty and flavorful!!! I serve it with "fried rice" made out of cauliflower, which I will post soon!! sooo good I say!!!

Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 1-2 tablespoon olive oil, extra virgin
  • 1/4 cup chicken broth, low salt
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 cup salsa - low carb
  • 1/2 cup sour cream regular
  • 1/4 cup * optional - sharp cheddar cheese

How To Make atkins induction friendly "fiesta chicken"

  • Step 1
    Cut chicken up into bit size pieces, add spices.(you can always use what you like)
  • Step 2
    add oil to pan and cook on each side until brown. add in chicken broth and cook until done.
  • Step 3
    mix salsa and sour cream until well mixed.
  • Step 4
    add mixture to chicken and cook until desired thickness!
  • Step 5
    *optional - add 1/4 cup of fine sharp cheddar cheese. ( I do this sometimes!)
  • Step 6
    serve alone or over a low carb healthy side, example - cauliflower fried rice, cauliflower mashed potatoes!
