atkins induction friendly "fiesta chicken"
I am not sure if this is already a known recipe but I came up with this myself and I have made it for several family members and it is a hit!!! it is soooooo tasty and flavorful!!! I serve it with "fried rice" made out of cauliflower, which I will post soon!! sooo good I say!!!

Ingredients
- 1 pound chicken breasts, boneless and skinless
- 1-2 tablespoon olive oil, extra virgin
- 1/4 cup chicken broth, low salt
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 cup salsa - low carb
- 1/2 cup sour cream regular
- 1/4 cup * optional - sharp cheddar cheese
How To Make atkins induction friendly "fiesta chicken"

Step 1Cut chicken up into bit size pieces, add spices.(you can always use what you like)

Step 2add oil to pan and cook on each side until brown. add in chicken broth and cook until done.

Step 3mix salsa and sour cream until well mixed.

Step 4add mixture to chicken and cook until desired thickness!

Step 5*optional - add 1/4 cup of fine sharp cheddar cheese. ( I do this sometimes!)

Step 6serve alone or over a low carb healthy side, example - cauliflower fried rice, cauliflower mashed potatoes!
