Ingredients
- 1 1/2 pounds boneless beef sirloin - chopped
- 4 tablespoons thyme - minced - divided
- - course sea salt - to taste
- - fresh cracked black pepper - to taste
- 2 teaspoons olive oil, extra virgin
- 4 tablespoons softened butter
- 1 teaspoon ground mustard
- 4 tablespoons sour cream
- 4 tablespoons parmigiano-reggiano, grated
- 1 large shallot - diced fine

Step 1INSTRUCTIONS For the butter: Mix butter, mustard, and sour cream in a bowl until smooth. Stir in cheese. Season to taste with salt and freshly ground black pepper. Cover and refrigerate.

Step 2For the sirloin: Chop the meat with knives or have your Meat Man do it for you, He will gladly do it for you. Add the shallots in and combine. Gently shape beef into 2 thick oval patties. Sprinkle each with 2 tsp. of the thyme and season to taste with salt and freshly ground black pepper. Set aside for 10 minutes

Step 3Place the burgers on the grill and cook 8 minutes. Turn burgers over and continue cooking 5–6 minutes more for medium rare, 7–8 minutes more for medium. Top burgers with a chunk of the butter cheese mixture and serve.
