stuffed zucchini

I got this from Taste of Home several years ago and changed it up a bit to make it mine. I will post a picture as soon as I get it downloaded.

Ingredients

  • 2 medium zucchinis
  • 1/2 pound ground beef or sausage in bulk (i use sausage)
  • 1/4 cup chopped onion
  • 2/3 cup seasoned bread crumbs
  • 1 1/3 cups spaghetti sauce divided
  • 1/2 cup shredded cheddar cheese

How To Make stuffed zucchini

  • Step 1
    Cut zucchini in half lengthwise. Microwave for 5 minutes to soften.
  • Step 2
    Scoop out pulp leaving about 1/4 inch shell. Chop pulp.
  • Step 3
    Brown meat and onion. Add pulp, bread crumbs and 1/3 cup spaghetti sauce. Mix.
  • Step 4
    Spoon mixture into zucchini shells. Spoon on rest of spaghetti sauce, You may not need it all. sprinkle with cheese.
  • Step 5
    Place in greased baking dish . Any size they will fit into. Bake at 325 for 30 minutes or until zucchini is tender. 2 servings
