Slow Cooker Crock Pot

Ingredients

  • 1 1/2 lb
    lean ground beef
  • 1/4 c
    beef stock - (more if needed to keep moist while cooking)
  • 1 can(s)
    refried beans
  • 1 can(s)
    black beans - drained
  • 1 can(s)
    whole corn - drained
  • 1 can(s)
    green chilies - drained ( small can )
  • 2 tsp
    fresh oregano - chopped
  • 2 tsp
    ground cumin
  • 2 tsp
    chili powder
  • 1 large
    jalapena pepper - chopped
  • 1 tsp
    salt - or to taste
  • 12 medium
    6 or 8 inch corn tortillas ( depending on size of crock pot )
  • 3 Tbsp
    butter - melted
  • 2 1/2 c
    pepper jack cheese - shredded
  • 4 c
    lettuces - shredded
  • 2 tsp
    smoked paprika
  • 3 c
    tortilla sauce - your choice

How to Make Fireman Bob's Crock Pot Comfort Food Beef Surprise

Step-by-Step

  1. In a large bowl, combine the meat, beans, corn, chilies, oregano, beef stock, cumin, chili powder, jalapeno, and salt.
  2. Brush each tortilla with butter.
  3. Spoon the meat mixture over tortilla.
  4. Spread tortilla sauce over meat.
    Sprinkle first the lettuce, and then the cheese over meat mixture.
    Sprinkle with paprika.
  5. Place tortillas in crock pot in layers.
  6. Top with plenty of cheese.
  7. Cook on low for 4 hours, add beef stock if needed to keep moist.
  8. Serve with a good Crusty Bread.
