yield 6 to 8 or 1 hungry Fireman !

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1/4 cup beef stock - (more if needed to keep moist while cooking)
  • 1 can refried beans
  • 1 can black beans - drained
  • 1 can whole corn - drained
  • 1 can green chilies - drained ( small can )
  • 2 teaspoons fresh oregano - chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 large jalapena pepper - chopped
  • 1 teaspoon salt - or to taste
  • 12 medium 6 or 8 inch corn tortillas ( depending on size of crock pot )
  • 3 tablespoons butter - melted
  • 2 1/2 cups pepper jack cheese - shredded
  • 4 cups lettuces - shredded
  • 2 teaspoons smoked paprika
  • 3 cups tortilla sauce - your choice

How To Make fireman bob's crock pot comfort food beef surprise

  • Step 1
    In a large bowl, combine the meat, beans, corn, chilies, oregano, beef stock, cumin, chili powder, jalapeno, and salt.
  • Step 2
    Brush each tortilla with butter.
  • Step 3
    Spoon the meat mixture over tortilla.
  • Step 4
    Spread tortilla sauce over meat. Sprinkle first the lettuce, and then the cheese over meat mixture. Sprinkle with paprika.
  • Step 5
    Place tortillas in crock pot in layers.
  • Step 6
    Top with plenty of cheese.
  • Step 7
    Cook on low for 4 hours, add beef stock if needed to keep moist.
  • Step 8
    Serve with a good Crusty Bread. Enjoy !!!!!
