easy mexican-style pot roast
My son in laws mom gave this recipe to me and I loved it! It is a little spicy, but that's what made it taste so good, and the meat was so tender.

Ingredients
- 1 tablespoon canola oil
- 1 - 3 lb boneless beef chuck roast
- 1 - 14.5 oz can whole tomatoes, undrained, chopped
- 1 - 4 oz can chopped green chiles
- 1 - envelope taco seasoning
- 1 - beef bouillon, crushed
- 1 tablespoon brown sugar
- 2 tablespoons water
- 1 tablespoon cornstarch
How To Make easy mexican-style pot roast

Step 1In lg pot, heat oil over medium heat. Brown roast on all sides. In bowl, combine tomatoes w/ their juices, chiles, taco seasoning, bouillon, and brown sugar.

Step 2Pour mix over roast. Reduce heat to low. Simmer 3-3-1/2 hrs, or until meat is fork tender. Remove roast to platter, keep warm.

Step 3In measuring cup, whisk together water and cornstarch. Pour into pot. Stir until it thickens. Serve sliced roast w/ sauce.
