I went to the grocery store this morning and the smell of hot French bread caught my attention. I thought to myself, this would go perfectly with a bowl of tomato basil cream soup

Ingredients

  • 2 cups roma tomatoes peeled/chopped
  • 2 cups vine tomatoes peeled/chopped
  • 1/2 cup basil chopped
  • 1 cup heavy cream
  • 2 tablespoons salted sweet cream butter
  • 2 cups vegetable juice
  • 2 cups vegetable stock
  • - salt and pepper to taste

How To Make tomato basil cream soup

  • Step 1
    In a saucepan combine tomatoes, juice, and stock. Simmer for 30 mins and add basil.
  • Step 2
    Use a hand-held blender in the saucepan to blend.
  • Step 3
    Add cream and butter. Stirring over low heat until butter is melted. Remove from heat.
  • Step 4
    Ladle soup into your favorite bowl. Garnish with basil and serve.
