I went to the grocery store this morning and the smell of hot French bread caught my attention. I thought to myself, this would go perfectly with a bowl of tomato basil cream soup

roma tomatoes peeled/chopped
2 c
vine tomatoes peeled/chopped
1/2 c
basil chopped
1 c
heavy cream
2 Tbsp
salted sweet cream butter
2 c
vegetable juice
2 c
vegetable stock
salt and pepper to taste

How to Make Tomato Basil Cream Soup


  • 1In a saucepan combine tomatoes, juice, and stock. Simmer for 30 mins and add basil.
  • 2Use a hand-held blender in the saucepan to blend.
  • 3Add cream and butter. Stirring over low heat until butter is melted. Remove from heat.
  • 4Ladle soup into your favorite bowl. Garnish with basil and serve.
