This is a yummy and easy sandwich to prepare- and if you love catfish you will like this recipe. ;which I found in The Best of the Best in Nevada Cookbook. This would have been one of my dad's favorite's as he was an avid fisherman.

Ingredients For zane's catfish blt

  • FISH PREP:
  • 1 lg
    egg,beaten
  • 1/4 tsp
    salt
  • 1 pinch
    cayenne pepper
  • 1/2 c
    all purpose flour,seasoned with salt and pepper
  • 1/2 c
    cornmeal
  • 1 lb
    catfish fillets(4 oz. each)
  • 4
    soft hoagie rolls, split
  • 1/2 c
    shredded or 4 lettuce leaves
  • 1 lg
    ripe tomato, sliced thin
  • 4 slice
    red onion thinly sliced
  • 8 slice
    or more crispy cooked bacon
  • vegetable or canola oil for frying fish
  • SAUCE:
  • 1/3 c
    mayonnaise, not salad dressing
  • 1 1/2 Tbsp
    sweet pickle relish
  • 2 tsp
    bottled capers, drained and diced
  • 1 1/2 tsp
    dijon mustard
  • 1 1/2 Tbsp
    fresh lemon juice
  • 1 1/2 Tbsp
    cocktail sauce
  • 1 tsp
    lemon zest
  • salt and pepper to taste

    combine all sauce ingredients and chill covered for 1 hour.

How To Make zane's catfish blt

  • 1
    Beat eggs with salt and cayenne, Place flour, cornmeal and egg mixture in 3 separate shallow bowl. Dredge catfish in flour; shake off excess. Then in egg mixture, and then in the cornmeal.

    Heat 1 inch of oil in electric skillet to 375^. Fry fish 2 to 4 minutes on each side or until it is done inside and crispy golden on the outside. Drain on paper towels.

    Assembly: On each bottom 1/2 of roll, layer lettuce, tomatoes, onion 2 slices of bacon, fish and top with cocktail sauce. Serve with fries or chips.
