Ingredients
- 2 large potatoes-diced in small chunks
- 1 small onion-smal diced
- 2 cans albacore tuna
- 1-1/2 teaspoon garllic parsley salt
- 2 large eggs
- cornmeal or polenta
How To Make tuna potato patties

Step 1In a large Pot, boil potatoes for 15 minutes. Drain off liquid. Cool slightly, then mash adding in salt to taste. Set aside .

Step 2Drain cans of Tuna. Add to mashed potatoes. Add in eggs. Stir to combined. sprinkle Garlic parsley salt. Stir again. Cover and refrigerate for 30 min.

Step 3Using a small cookie scoop, portion into a ball, slightly pressing into a thick disk.

Step 4Dip both sides in cornmeal. Set disks on clean plate. Heat 2 T. in a non-stick skillet on med. Do not move meat until slightly browned on one side. Flip and check often for firmness. Place on serving plate.

Step 5Serve with salad or fruit salad.
