This is my entry for this week's Sandwiches, Sammiches & Sammies challenge.
I wanted something different, and this seemed to work for me! Wish I could say my husband liked it, but he refuses to eat tuna! I ate it & think it's a really neat idea!

    tuna in water, drained (small)
  • 2
    egg whites, lightly beaten
  • 1/2 tsp
    coarse ground black pepper
  • 1/4 c
    finely chopped onion
  • 1/2 tsp
    mrs. dash fiesta lime seasoning
  • 1/4 tsp
    crushed red pepper flakes
  • 1/2-3/4 c
    seasoned bread crumbs
  • 3 Tbsp
    cheddar cheese, shredded
  • ********SAUCE********

  • 1/4 tsp
    crushed red pepper flakes
  • 1/2 c
    kraft mayonnaise w/olive oil
  • 1/4 c
    sun dried tomatoes, dry packed, chopped
  • 4 slice
    12-grain bread
  • ·
    red leaf lettuce
  • 12 slice
    dill pickle chips

How to Make Tuna Melt w/Sun Dried Tomatoes & 12 Gr Bread


  1. Drain water off tuna and flake with fork, breaking up any chunks.
  2. In medium bowl, beat the egg whites until they are just starting to get bubbly; stir in tuna, bread crumbs (start with 1/2 c, add more as needed to bind it). Blend in 1/4 tsp. crushed red pepper, black pepper, Mrs. Dash and onion. Stir well, then form into two patties sized to fit bread slices.
  3. Cook in nonstick skillet, sprayed w/Pam, until golden on both sides. Then, sprinkle the cheese over patties and cover w/lid or foil until cheese melts (about 2 min).
  4. Combine mayonnaise, 1/4 tsp. crushed red pepper flakes and chopped sun dried tomatoes. Stir well to blend. Evenly divide between all 4 slices of bread, spreading to cover.
  5. Arrange lettuce over dressing on two slices, add tuna patties, then top with pickle slices.
  6. Cut sandwiches in half and enjoy! There is a tang to the sauce, but it isn't really hot.
