tuna melt w/sun dried tomatoes & 12 gr bread

This is my entry for this week's Sandwiches, Sammiches & Sammies challenge. I wanted something different, and this seemed to work for me! Wish I could say my husband liked it, but he refuses to eat tuna! I ate it & think it's a really neat idea! Hope you will all give it a shot & keep an open mind when you're reading the ingredients...Enjoy!

Ingredients

  • 1 can tuna in water, drained (small)
  • 2 - egg whites, lightly beaten
  • 1/2 teaspoon coarse ground black pepper
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon mrs. dash fiesta lime seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2-3/4 cup seasoned bread crumbs
  • 3 tablespoons cheddar cheese, shredded
  • ********SAUCE********
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup kraft mayonnaise w/olive oil
  • 1/4 cup sun dried tomatoes, dry packed, chopped
  • 4 slices 12-grain bread
  • - red leaf lettuce
  • 12 slices dill pickle chips

How To Make tuna melt w/sun dried tomatoes & 12 gr bread

  • Step 1
    Drain water off tuna and flake with fork, breaking up any chunks.
  • Step 2
    In medium bowl, beat the egg whites until they are just starting to get bubbly; stir in tuna, bread crumbs (start with 1/2 c, add more as needed to bind it). Blend in 1/4 tsp. crushed red pepper, black pepper, Mrs. Dash and onion. Stir well, then form into two patties sized to fit bread slices.
  • Step 3
    Cook in nonstick skillet, sprayed w/Pam, until golden on both sides. Then, sprinkle the cheese over patties and cover w/lid or foil until cheese melts (about 2 min).
  • Step 4
    Combine mayonnaise, 1/4 tsp. crushed red pepper flakes and chopped sun dried tomatoes. Stir well to blend. Evenly divide between all 4 slices of bread, spreading to cover.
  • Step 5
    Arrange lettuce over dressing on two slices, add tuna patties, then top with pickle slices.
  • Step 6
    Cut sandwiches in half and enjoy! There is a tang to the sauce, but it isn't really hot.
