tuna melt w/sun dried tomatoes & 12 gr bread
This is my entry for this week's Sandwiches, Sammiches & Sammies challenge. I wanted something different, and this seemed to work for me! Wish I could say my husband liked it, but he refuses to eat tuna! I ate it & think it's a really neat idea! Hope you will all give it a shot & keep an open mind when you're reading the ingredients...Enjoy!

Ingredients
- 1 can tuna in water, drained (small)
- 2 - egg whites, lightly beaten
- 1/2 teaspoon coarse ground black pepper
- 1/4 cup finely chopped onion
- 1/2 teaspoon mrs. dash fiesta lime seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/2-3/4 cup seasoned bread crumbs
- 3 tablespoons cheddar cheese, shredded
- ********SAUCE********
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup kraft mayonnaise w/olive oil
- 1/4 cup sun dried tomatoes, dry packed, chopped
- 4 slices 12-grain bread
- - red leaf lettuce
- 12 slices dill pickle chips
How To Make tuna melt w/sun dried tomatoes & 12 gr bread

Step 1Drain water off tuna and flake with fork, breaking up any chunks.

Step 2In medium bowl, beat the egg whites until they are just starting to get bubbly; stir in tuna, bread crumbs (start with 1/2 c, add more as needed to bind it). Blend in 1/4 tsp. crushed red pepper, black pepper, Mrs. Dash and onion. Stir well, then form into two patties sized to fit bread slices.

Step 3Cook in nonstick skillet, sprayed w/Pam, until golden on both sides. Then, sprinkle the cheese over patties and cover w/lid or foil until cheese melts (about 2 min).

Step 4Combine mayonnaise, 1/4 tsp. crushed red pepper flakes and chopped sun dried tomatoes. Stir well to blend. Evenly divide between all 4 slices of bread, spreading to cover.

Step 5Arrange lettuce over dressing on two slices, add tuna patties, then top with pickle slices.

Step 6Cut sandwiches in half and enjoy! There is a tang to the sauce, but it isn't really hot.
