Tuna Melt w/Sun Dried Tomatoes & 12 Gr Bread

Jan W

This is my entry for this week's Sandwiches, Sammiches & Sammies challenge.
I wanted something different, and this seemed to work for me! Wish I could say my husband liked it, but he refuses to eat tuna! I ate it & think it's a really neat idea!
Hope you will all give it a shot & keep an open mind when you're reading the ingredients...Enjoy!

How to Make Tuna Melt w/Sun Dried Tomatoes & 12 Gr Bread

  • 1Drain water off tuna and flake with fork, breaking up any chunks.
  • 2In medium bowl, beat the egg whites until they are just starting to get bubbly; stir in tuna, bread crumbs (start with 1/2 c, add more as needed to bind it). Blend in 1/4 tsp. crushed red pepper, black pepper, Mrs. Dash and onion. Stir well, then form into two patties sized to fit bread slices.
  • 3Cook in nonstick skillet, sprayed w/Pam, until golden on both sides. Then, sprinkle the cheese over patties and cover w/lid or foil until cheese melts (about 2 min).
  • 4Combine mayonnaise, 1/4 tsp. crushed red pepper flakes and chopped sun dried tomatoes. Stir well to blend. Evenly divide between all 4 slices of bread, spreading to cover.
  • 5Arrange lettuce over dressing on two slices, add tuna patties, then top with pickle slices.
  • 6Cut sandwiches in half and enjoy! There is a tang to the sauce, but it isn't really hot.
