Heat oven to 350^.
Toss vegetable in medium bowl, combine olive oil and grape juice and pour over veggies; toss to coat well, sprinkle with salt and pepper to taste.
Place on a foil lined baking dish that haas been coated with coconut oil. Roast in oven for 25 minutes, until fork tender.
Can use frozen mixed vegetables, 1 1/2 cups thawed.
