I had some left-over tilapia fillets, so i decided to make some healthy sandwiches w/ them.

Ingredients

  • 1/4 c
    lite mayonnaise
  • 1/4 c
    diced red onion
  • 1/2 c
    finely chopped, seeded tomatoes
  • 2 Tbsp
    dill pickle relish
  • 1/2 tsp
    cayenne pepper
  • ·
    salt and pepper to taste
  • 2
    tilapia fillets
  • 1 tsp
    old bay seasoning
  • 1/2 tsp
    garlic powder
  • 2 Tbsp
    butter
  • 4 slice
    pepperjack cheese, reduced-fat if you can find it.
  • 4 slice
    whole wheat bread, toasted

How to Make Tilapia sandwiches

Step-by-Step

  1. In bowl, stir together mayonnaise, onion, tomatoes, relish and cayenne pepper. Set aside.
  2. Season both sides of fillets w/ old bay seasoning and garlic powder. Melt butter in skillet over medium heat. Add fillets and cook about 3-5 min per side, or until fish flakes easily and is well browned.
  3. Place 2 slices of cheese on each fillet. Cover skillet until cheese melts. Place each fillet onto a slice of toast. Spread w/ the mayonnaise sauce. Top w/ remaining toast.
