I had some left-over tilapia fillets, so i decided to make some healthy sandwiches w/ them.

Ingredients
- 1/4 cup lite mayonnaise
- 1/4 cup diced red onion
- 1/2 cup finely chopped, seeded tomatoes
- 2 tablespoons dill pickle relish
- 1/2 teaspoon cayenne pepper
- - salt and pepper to taste
- 2 - tilapia fillets
- 1 teaspoon old bay seasoning
- 1/2 teaspoon garlic powder
- 2 tablespoons butter
- 4 slices pepperjack cheese, reduced-fat if you can find it.
- 4 slices whole wheat bread, toasted
How To Make tilapia sandwiches

Step 1In bowl, stir together mayonnaise, onion, tomatoes, relish and cayenne pepper. Set aside.

Step 2Season both sides of fillets w/ old bay seasoning and garlic powder. Melt butter in skillet over medium heat. Add fillets and cook about 3-5 min per side, or until fish flakes easily and is well browned.

Step 3Place 2 slices of cheese on each fillet. Cover skillet until cheese melts. Place each fillet onto a slice of toast. Spread w/ the mayonnaise sauce. Top w/ remaining toast.
