I had some left-over tilapia fillets, so i decided to make some healthy sandwiches w/ them.

Ingredients

  • 1/4 cup lite mayonnaise
  • 1/4 cup diced red onion
  • 1/2 cup finely chopped, seeded tomatoes
  • 2 tablespoons dill pickle relish
  • 1/2 teaspoon cayenne pepper
  • - salt and pepper to taste
  • 2 - tilapia fillets
  • 1 teaspoon old bay seasoning
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter
  • 4 slices pepperjack cheese, reduced-fat if you can find it.
  • 4 slices whole wheat bread, toasted

How To Make tilapia sandwiches

  • Step 1
    In bowl, stir together mayonnaise, onion, tomatoes, relish and cayenne pepper. Set aside.
  • Step 2
    Season both sides of fillets w/ old bay seasoning and garlic powder. Melt butter in skillet over medium heat. Add fillets and cook about 3-5 min per side, or until fish flakes easily and is well browned.
  • Step 3
    Place 2 slices of cheese on each fillet. Cover skillet until cheese melts. Place each fillet onto a slice of toast. Spread w/ the mayonnaise sauce. Top w/ remaining toast.
