It was originaly called Buttery Shrimp and Eggplant Kabobs. I just grilled the shrimp, no veggies.
1 lbshrimp deveined and shell removed
2 Tbspwhipped butter
2 tspolive oil
2 clovegarlic, minced
1 Tbsplemon juice
1 to 2 tsphot sauce
1 Tbsphot horseradish
·salt and pepper to taste.
1 smallonion, chopped
How to Make Shrimp Kabobs
- Peel and devein shrimp and put in a shallow plate, I like to use a glass pie plate.
- Combine everything else in a bowl, stir to combine and pour over shrimp. Let marinate overnight oif possible, longer is better.
- Put the shrimp on 4 skewrs and grill on high for 3 to 5 minutes, or until shrimp are pink and firm. Do not over cook.
I use my stove top grill for this. An outside grill would work fine as well.
