Seafood Essentials: Baked Garlic, Parmesan Cod

  • 2 Tbsp
    lime juice, freshly squeezed, warmed
  • 2 Tbsp
    olive oil, extra virgin, warmed
  • 2 Tbsp
    sweet butter, unsalted, melted

  • 1/3 c
    flour, all-purpose variety
  • 1 tsp
    fresh dill, finely chopped
  • 1 tsp
    sweet paprika
  • 1 tsp
    ground cumin
  • 1/2 tsp
    salt, kosher variety
  • 1/4 tsp
    white pepper, freshly ground

  • 8 oz
    cod fillet
  • 1 clove
    garlic, minced
  • 2 Tbsp
    panko breadcrumbs
  • 2 medium
    tomatoes, diced
  • 3 Tbsp
    parmesan cheese

How to Make Seafood Essentials: Baked Garlic, Parmesan Cod


  2. Gather your Ingredients.
  3. Chop the tomatoes, and reserve.
  4. Place a rack in the middle position, and preheat the oven to 400f (205c).
  5. Combine the lime sauce mixture in a small dish, and add the crust mixture to another.
  6. Place the oil into a small cast-iron skillet over medium heat.
  7. Dip the cod filet in the lime sauce mixture, and then reserve the remaining lime sauce mixture.
  8. Drag the cod filet through the crust mixture.
  9. Add the minced garlic to the lime sauce mixture, stir to combine, and reserve.
  10. Add the filet to the hot pan.
  11. Cook to brown on both sides, about 2 minutes per side.
  12. Temporarily, remove the fish, and add the reserved tomatoes, and sprinkle with a bit of salt and pepper.
  13. Return the fish to the pan, and drizzle with the lime sauce mixture (with the added garlic) over the fish, and then sprinkle with the breadcrumbs and parmesan cheese.
  14. Add the skillet to the preheated oven, and bake until the fish easily flakes, about 10 - 12 minutes.
  16. Serve with your favorite sides, and some tartar sauce. Enjoy.
  17. Keep the faith, and keep cooking.
