Ingredients

  • PLAN/PURCHASE
  • LIME SAUCE MIXTURE 
  • 2 tablespoons lime juice, freshly squeezed, warmed
  • 2 tablespoons olive oil, extra virgin, warmed
  • 2 tablespoons sweet butter, unsalted, melted
  • CRUST MIXTURE
  • 1/3 cup flour, all-purpose variety
  • 1 teaspoon fresh dill, finely chopped
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt, kosher variety
  • 1/4 teaspoon white pepper, freshly ground
  • THE FISH
  • 8 ounces cod fillet
  • 1 clove garlic, minced
  • 2 tablespoons panko breadcrumbs
  • 2 medium tomatoes, diced
  • 3 tablespoons parmesan cheese

    PREP/PREPARE
  • Step 2
    Gather your Ingredients.
  • Step 3
    Chop the tomatoes, and reserve.
  • Step 4
    Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Step 5
    Combine the lime sauce mixture in a small dish, and add the crust mixture to another.
  • Step 6
    Place the oil into a small cast-iron skillet over medium heat.
  • Step 7
    Dip the cod filet in the lime sauce mixture, and then reserve the remaining lime sauce mixture.
  • Step 8
    Drag the cod filet through the crust mixture.
  • Step 9
    Add the minced garlic to the lime sauce mixture, stir to combine, and reserve.
  • Step 10
    Add the filet to the hot pan.
  • Step 11
    Cook to brown on both sides, about 2 minutes per side.
  • Step 12
    Temporarily, remove the fish, and add the reserved tomatoes, and sprinkle with a bit of salt and pepper.
  • Step 13
    Return the fish to the pan, and drizzle with the lime sauce mixture (with the added garlic) over the fish, and then sprinkle with the breadcrumbs and parmesan cheese.

    Add the skillet to the preheated oven, and bake until the fish easily flakes, about 10 - 12 minutes.
