The rich steak-like texture and flakiness of salmon really shines with this preparation. The result is a rich steak-like salmon with a hint of sweetness to the meat. This recipe is a perfect pairing for rosé or light bodied white wines. If you’re looking for a tasty addition, add some lemon thyme to the pesto. Ingredients For salmon with sunflower-dill pesto sauce

  • 3/4 c
    sunflower seeds
  • 3/4 c
    basil leaves
  • 3/4 Tbsp
    fresh dill
  • 1 Tbsp
    green onion
  • 1 clove
    garlic
  • 1 Tbsp
    lemon juice
  • 2 tsp
    olive oil
  • 1/4 tsp
    sea salt
  • 2
    salmon fillets
  • 1 tsp
    sea salt and pepper
  • sunflower seeds and dill

How To Make salmon with sunflower-dill pesto sauce

    Preheat the oven to 320°F temp.

    Blend sunflower seeds, dill, basil leaves, lemon juice, garlic and olive oil in a blender until a smooth and creamy Pesto.

    Season the skin of Salmon fillet with a pinch of salt and pepper. Heated the oil in a frying pan. Sear the salmon for 3 minutes on each side.

    Cook the salmon in the preheated oven for 5 minutes.

    Serve the salmon with the pesto sauce on top. Garnish with few sunflower seeds and dill over the top and enjoy.
