salmon and spinach with dill and lemon sauce

Serve over rice or couscous, though I prefer it with couscous. You can also use any veggies you want, but I find this an easy way to fancy up canned spinach (and garlic and spinach go really well together). We all have those cans of spinach lurking in the back of the pantry! This way they actually taste good! Lol We love garlic in our house, but you can adjust to suit your taste. I didn't include the rice or couscous cooking time.

Ingredients For salmon and spinach with dill and lemon sauce

  • 1 c
    plain yogurt
  • 4 Tbsp
    chopped fresh dill
  • 4 tsp
    lemon zest, grated
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    butter
  • 4
    skinless salmon fillets
  • 1 Tbsp
    olive oil
  • 6 clove
    finely chopped garlic
  • 1 can
    spinach
  • To taste
    salt and pepper

How To Make salmon and spinach with dill and lemon sauce

    In a bowl mix well the yogurt, dill, lemon zest and oil. Turn oven on Warm setting.

    In a large pan, melt butter. On med/high heat add salmon fillets and sear for 3 minutes. Flip and cook 3 more minutes. Place in oven to stay warm.

    Heat oil and saute garlic until fragrant. Add drained spinach and stir until heated through. Season to taste with salt and pepper.

    Place rice or couscous on plate with spinach and top with salmon. Spoon sauce over fish.
