Ingredients
- 14 3/4 ounces can of pink salmon, drained -skin and bones remover
- 3/4 cup seasoned italian breadcrumbs
- 1/2 cup finely chopped red onion
- 3 tablespoons mayonnaise or salad dressing
- 2 large eggs, beaten
- juice small fresh lemon squeezed
- 1 tablespoon italian seasoning
- 1/4 teaspoon garlic powder
- 3 tablespoons canola oil, for frying

Step 1Drain and flake the salmon in a medium bowl. Combine all ingredients,except canola oil; blend well.

Step 2Divide mixture into 4 parts(mixture will be moist). In a large skillet heat the canola oil and cook over medium heat until both sides are golden brown and heated through-turning once.
