panko crusted, lemon pepper swai
We used Swai, but you could do this with any mild white fish that you enjoy. My favorites for this are swai, haddock and cod.

Ingredients
- 4 swai fillets, thawed
- 2 cups panko bread crumbs
- 1 cup all purpose flour
- 3 large egg whites, beaten
- 1 teaspoon old bay seasoning
- 1 teaspoon lemon pepper
- 1/2 teaspoon salt
- canola oil for frying
- lemon slices (optional)
- fresh chopped parsley (optional)

How To Make panko crusted, lemon pepper swai

Step 1Heat oil in large, deep skillet over medium high heat.

Step 2While oil is heating, pat fish dry and sprinkle with salt & pepper to taste.

Step 3Mix together salt, lemon pepper and old bay seasoning with panko crumbs.

Step 4Dredge fish in flour, then dip in egg whites and roll in panko mixture.

Step 5Fry in oil until browned and cooked through. About six minutes per side.

Step 6Garnish with a lemon slice and some fresh parsley if desired and serve with a good tarter sauce.
