mediterranean cod fish
This is a super fast dish to make any night of the week. It goes great with pasta, rice, polenta or couscous. Some crusty bread is lovely when dipped in the remaining oil from the pan.

Ingredients
- butter flavored cooking spray
- 6 - cod fish fillets
- salt and pepper, to taste
- 1/2 teaspoon coriander
- zest of 1 lemon
- 1/2 teaspoon paprika
- 1 - lemon, thinly sliced
- 2 cloves garlic, thinly sliced
- 2 tablespoons capers
- 3 tablespoons olive oil
- fresh cilantro leaves (or chopped fresh parsley, if preferred)
How To Make mediterranean cod fish

Step 1Preheat oven to 400 degrees.

Step 2Spray 9x13 glass baking dish with butter flavored cooking spray.

Step 3Pat fish dry and place each fillet in baking dish.

Step 4Sprinkle fish evenly with salt, pepper, coriander, lemon zest and paprika.

Step 5Place a lemon slice on top of each fillet.

Step 6Sprinkle sliced garlic and capers over top of fillets. Drizzle with olive oil.

Step 7Bake uncovered for 15 minutes or until cooked through and flakes easily.

Step 8Plate and sprinkle with fresh cilantro leaves or chopped parsley.

Step 9I like to serve this over fried polenta slices or parslied pearl couscous, but rice or pasta works nicely as well!
