"I had a friend that had brought me some Orange Roughy Fish one time. Hence the name, I decided upon prepare this fish in a citrus marinade. Turned out tender and flaky. Very delictable & nutritious. Can also be grilled on the grill."

Ingredients For le orange roughy

  • 4- 6 oz
    orange roughy filets
  • 1- 4 oz
    can frozen orange juice
  • 1 tsp
    lemon juice (or juice of real lemon)
  • 1 tsp
    lime juice (or juice of real lime)
  • 1/2 tsp
    minced garlic
  • 1 Tbsp
    mrs. dash onion & herb
  • 1 Tbsp
    mrs. dash table blend
  • lrg. mixing bowl
  • lrg. ziploc bag (gallon size)
  • 9 x 11 inch baking pan
  • foil

How To Make le orange roughy

    In a bowl, combine the thawed orange juice, lemon juice, lime juice, minced garlic, Mrs. Dash Onion & Herb, and Mrs. Dash Table Blend together. Pour marinade in the ziploc bag, place the 4 orange roughy fillets in the bag and close bag, releasing some air. Completely saturate the fillets in the bag with the marinade.

    ( I like to prep this the night before so the fish can marinate overnight, enhancing the flavor.)

    Preheat oven to 425* F. Place the Orange roughy in the 9x11 inch pan w/ all the marinade. Cover the pan with the foil tightly. Place in the oven and bake for 45 minutes. Serve w/ a sprig of mint.
