This is one of the few good recipes that are from Weight Watchers. I did tweak it a little to add some flavor to it. It comes from the Weight Watchers book Meals in Minutes Cookbook and is an old book, copyright 1989. This was written before they used the point system. I calculated it to be about 5 points. It has 252 calories with 12g fat.

Ingredients

  • 2 - two 1/4 pound fish fillets, flounder or tiliapia work good here
  • 1 tablespoon all purpose flour
  • 1 teaspoon all purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne powder
  • 1 teaspoon each salt and pepper, divided
  • 1 tablespoon whipped butter
  • 1/2 ounce sliced almonds
  • 2 teaspoons olive oil
  • 1/4 cup white wine
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh parsley, chopped

How To Make fish amandine ww

  • Step 1
    Combine the flour, garlic powder, onion powder, cayenne, and half of the salt and pepper, put in a shallow plate.
  • Step 2
    Dredge the fish in the flour mixture, reserve any flour left over.
  • Step 3
    Spray a non stick pan with spray, heat the olive oil and brown the fish on both sides, maybe 3 minutes a side. When the fish flakes with a fork it is done. Cover fish and keep warm.
  • Step 4
    Melt butter in the same pan, add almonds and saute until browned, maybe 2 minutes. add rest of flour,wine, lemon juice, other half of the salt and pepper.Cook until mixture reduces by half and is thickend.Serve over fish.
