Ingredients

  • 4
    kiwi, peeled
  • 2 Tbsp
    chopped red onion
  • 4 tsp
    olive oil
  • 3 tsp
    lemon juice
  • 1/2 tsp
    grated lemon rind
  • 3/4 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 4
    salmon fillets (1 pound)

How to Make Broiled Salmon with Kiwi-Lemon Salsa

Step-by-Step

  1. MAKE KIWI-LEMON SALSA:
    Coarsely chop 1 kiwi. Place in food processor or blender. Whirl until pureed. Transfer to small bowl.
  2. Chop remaining kiwis. Add to bowl along with onion, 1 teaspoon oil, 1 teaspoon lemon juice, 1/4 teaspoon lemon rind, 1/4 teaspoon salt and 1/8 teaspoon pepper; set salsa aside.
  3. Preheat broiler. Coat broiler-pan rack with cooking spray. Place 6 inches from source of heat.
  4. Whisk remaining oil, lemon juice and rind, salt and pepper in small bowl. Brush salmon with mixture. Place salmon on broiler pan rack.
  5. Broil 3 minutes. Turn salmon over. Brush with lemon mixture. Broil 3 minutes or until fish flakes when tested with fork. Serve immediately with Kiwi-Lemon Salsa
