Ingredients
- 4 - kiwi, peeled
- 2 tablespoons chopped red onion
- 4 teaspoons olive oil
- 3 teaspoons lemon juice
- 1/2 teaspoon grated lemon rind
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 - salmon fillets (1 pound)
How To Make broiled salmon with kiwi-lemon salsa

Step 1MAKE KIWI-LEMON SALSA: Coarsely chop 1 kiwi. Place in food processor or blender. Whirl until pureed. Transfer to small bowl.

Step 2Chop remaining kiwis. Add to bowl along with onion, 1 teaspoon oil, 1 teaspoon lemon juice, 1/4 teaspoon lemon rind, 1/4 teaspoon salt and 1/8 teaspoon pepper; set salsa aside.

Step 3Preheat broiler. Coat broiler-pan rack with cooking spray. Place 6 inches from source of heat.

Step 4Whisk remaining oil, lemon juice and rind, salt and pepper in small bowl. Brush salmon with mixture. Place salmon on broiler pan rack.

Step 5Broil 3 minutes. Turn salmon over. Brush with lemon mixture. Broil 3 minutes or until fish flakes when tested with fork. Serve immediately with Kiwi-Lemon Salsa
