How to Make Broiled Salmon with Kiwi-Lemon Salsa
- MAKE KIWI-LEMON SALSA:
Coarsely chop 1 kiwi. Place in food processor or blender. Whirl until pureed. Transfer to small bowl.
- Chop remaining kiwis. Add to bowl along with onion, 1 teaspoon oil, 1 teaspoon lemon juice, 1/4 teaspoon lemon rind, 1/4 teaspoon salt and 1/8 teaspoon pepper; set salsa aside.
- Preheat broiler. Coat broiler-pan rack with cooking spray. Place 6 inches from source of heat.
- Whisk remaining oil, lemon juice and rind, salt and pepper in small bowl. Brush salmon with mixture. Place salmon on broiler pan rack.
- Broil 3 minutes. Turn salmon over. Brush with lemon mixture. Broil 3 minutes or until fish flakes when tested with fork. Serve immediately with Kiwi-Lemon Salsa
