Ingredients
- 2 pounds whole boned bass or whitefish
- 2 cups white wine vinegar
- 2 teaspoons salt
- 2 teaspoons pickling spice
- 1 stick cinnamon
- 1 medium bay leaf
- 1 dash cayenne pepper
How To Make baked bass with erin sauce

Step 1Preheat oven to 375^. Wipe fish well with damp paper towels. Place in a large,non-corrosive shallow baking pan. a glass dish is the best.

Step 2Pour vinegar over fish; add salt and spices sprinkled over top. Bake, covered with foil, about 40 minutes, or until fish flakes easily with a fork.
