This Irish recipe can be made with Bass or whitefish;and the recipe will turn out tender flaky fish baked in the oven. Serve with the Erin Sauce.

Ingredients For baked bass with erin sauce

  • 2 lb
    whole boned bass or whitefish
  • 2 c
    white wine vinegar
  • 2 tsp
    salt
  • 2 tsp
    pickling spice
  • 1 stick
    cinnamon
  • 1 md
    bay leaf
  • 1 dash
    cayenne pepper

How To Make baked bass with erin sauce

    Preheat oven to 375^. Wipe fish well with damp paper towels. Place in a large,non-corrosive shallow baking pan. a glass dish is the best.

    Pour vinegar over fish; add salt and spices sprinkled over top. Bake, covered with foil, about 40 minutes, or until fish flakes easily with a fork.
