St. Pat's Green Chicken Chili

Starting my menu for St. Patricks day. This was the highlight of last years party. In fact my nephew and my children have been asking me if Im going to make this again. Of course I am! Nothing makes me happier than seeing my family enjoy my recipes. Although It may sound like your typical chicken chili, I have turned into a green irish like stew, with a few added tweeks.

    already cooked rotiserie chicken shredded
  • 10 c
    chicken stock
  • 2 can(s)
    tomatillos or 1 1/2 freshed poached
  • 2
    chopped seeded green pepper
  • 1 large
    chopped onion
  • 2 clove
  • 2 medium
    seeded chopped jalepeno peppers
  • 2 can(s)
    white beans
  • 1 can(s)
    white corn
  • 1 large
    chopped zucchini
  • 2 small
    cans chopped green chilis
  • 1 bunch
    fresh cilantro
  • 1 bag(s)
    shredded cabbage (coleslaw mix no carrots)

How to Make St. Pat's Green Chicken Chili


  1. In frying pan of olive oil (2tbls) saute onion, zucchini, garlic, & peppers till softened.
    Add to crockpot.
  2. In food processor puree tomatillos, green chilis & cilantro.
    Add to crockpot.
  3. To crockpot add drained cans of beans and corn, cabbbage, shredded chicken. Pour chicken stock over and spices.
    Set on med for 4 hours stirring occationally.
    Enjoy with nachos or over rice.
