Chicken and bean "Stoup"

Its too thick and chunky for a soup but not quite a stew. It's a Stoup!! This recipe is delicious and couldn't be easier. I used left over chicken leg quarters that I had smoked a few days earlier but a rotisserie chicken would work fine. This is a perfect comfort food meal.

Ingredients

  • 2 can(s)
    great northern beans, drained
  • 3 c
    diced chicken, smoked or rotisserie
  • 4 c
    chicken broth or ham stock
  • 1/2
    onion, chopped
  • 1 clove
    garlic, minced
  • 2 Tbsp
    chopped fresh parsley
  • 1 lb
    small potatoes, red, gold or purple cut in half

How to Make Chicken and bean "Stoup"

Step-by-Step

  1. Place potatoes in 4 cups water and boil for 10 minutes until tender. Drain off water.
  2. Place all ingredients in crock pot and cook on high for 3 hours or low for 6 hours.
  3. Enjoy with rolls or cornbread.
