simple roast chicken
This chicken is superjuicy and very flavorful. Though there are a lot of ingredients, 4 of mine were tubed and I made the paste in about 10 minutes. For those that are accent shy omit it, the kosher salt adds more than enough enhancer. I just wanted something around the house to nosh on and it will become chicken salad or on cooler days served with herbed mushroom rice and zucchini.

Ingredients
- 1 (4) pound fresh or frozen chicken
- 1/2 cup olive oil
- 1 tablespoon kosher salt
- 1 tablespoon cracked black pepper
- 2 tablespoons parsley,tubed
- 2 tablespoons basil, tubed
- 2 tablespoons cilantro, i use refridgerated
- 2 cloves garlic, smashed
- 6 slices butter, salted
- 2 tablespoons oregano, tubed
- 2 tablespoons lemongrass,tubed
- - accent, optional
How To Make simple roast chicken

Step 1Preheat oven to 450°

Step 2Take all seasonings, and olive oil and make a paste. Rub over chicken that has been rinsed and patted dry.

Step 3Dot your chicken with butter or not. I do for added richness.

Step 4Put your chicken in the oven uncovered for the 1st 20 minutes. Then lower temperature to 400° and continue roasting, another 40-50 minutes.

Step 5Remove from oven after a total time of 1 hour 15 minutes. Let rest 10 minutes before cutting.
