Ingredients
- MARINADE
- 1/2 cup lemon juice
- 6 cloves garlic, minced
- 1 tablespoon sugar
- 1 tablespoon dried oregano
- 1 1/2 teaspoons sweet mild paprika
- 2 pounds bone in, skin on chicken thighs
- BAKE
- 5 small red potatoes, cut into 1” cubes
- 2 small red onions, quartered
- 1 cup chicken broth
- 8 ounces whole cherry tomatoes
- 1/2 teaspoon each salt and pepper
- 1 tablespoon olive oil

Step 1Whisk marinade ingredients together in a bowl. Place chicken in a large ziplock type bag and marinade a few hours (or overnight) in refrigerator.

Step 2Preheat oven to 350F.

Step 3Coat a high sided baking sheet with nonstick spray. Place potatoes and onions in pan. Top with chicken pieces. Pour over the stock and marinade.

Step 4Bake 20 minutes. Remove pan from oven.

Step 5Place tomatoes around chicken and drizzle everything with olive oil. Sprinkle with salt and pepper. Bake another 30-35 minutes until chicken is done and potatoes are cooked.

Step 6Serve chicken and vegetables with pan juices.
