quick & easy chicken stir fry
Use beef, chicken, shrimp, pork. Either cooked or uncooked, just cook accordingly. You can also add an egg or two scrambled and broken up, along with green onion, water chestnuts or pretty much any vegetable, fresh or frozen. It's the best weeknight, easy dinner!

Ingredients
- 3 tablespoons olive oil + 2 tbsp olive oil
- 1 1/2 pounds uncooked chicken tenderloins (i use 3 med. boneless skinless breasts, sliced)
- 1/2 small onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 bag frozen steamer broccoli, cauliflower & carrots, microwaved according to directions
- 1 package frozen riced cauliflower
- 2 tablespoons soy sauce
How To Make quick & easy chicken stir fry

Step 1In a large skillet over medium high heat add oil. Add chicken, onion, salt, pepper, garlic powder. Cook 5-7 minutes, stirring, until chicken is cooked through. Remove from skillet to serving dish.

Step 2In the same skillet, add an additional 2 T. olive oil. Add frozen riced cauliflower and steamed vegetables. Stir and cook on medium high 3-4 minutes. Add the chicken and onion mixture back to skillet and stir fry, adding soy sauce, 2 minutes.

Step 3Place back into serving dish and serve hot.
