poultry essentials: sweet/sour chicken
I love sweet and sour recipes; they give you so many levels of flavor. This recipe is for sweet and sour chicken, and can be ready in 2.5 hours. If you would rather do this in your slow cooker, set it to low for about 7 hours, and you will have yummy chicken. I think it is a must that it be served over a nice warm pile of long-grained white rice. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 4 tablespoons sweet butter, unsalted
- 4 tablespoons tomato paste
- 1/2 cup apple cider vinegar
- 3/4 cup coconut sugar
- 3 tablespoons worcestershire sauce
- 2 cloves garlic, minced
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste
- 1-1/2 cup chicken stock, not broth
- 4 large chicken breasts, boneless, skinless, cut into bite-sized pieces
- 8 ounces pineapple chunks
- 1/2 medium red bell pepper, cut into strips

Step 2Gather your Ingredients (mise en place).

Step 3Place a rack in the bottom position, and preheat the oven to 325f (160c).

Step 4Add the butter, tomato paste, vinegar, coconut sugar, Worcestershire sauce, garlic, salt, pepper, and chicken stock to an ovenproof pot.

Step 5Slowly bring up to the simmer.

Step 6Add the chicken, and combine.

Step 7Cover, and place into the oven, and bake until the chicken is cooked through, about 2 hours.

Step 8Add the pineapple, and red pepper to the pot, return to the oven, and continue to bake for an additional 20 minutes.
