How to Make Poultry Essentials: Salsa-Braised Chicken Breasts

  2. The make-or-break item in this recipe is the salsa you select, so choose wisely. Here is my favorite salsa for this recipe:

  3. Gather your Ingredients (mise en place).
  4. Place a rack in the middle position, and preheat the oven to 400f (205c).
  5. Add the salsa to a baking dish, sprinkle both sides of the chicken breasts with salt and pepper, and then place in the dish with the salsa.
  6. Place the baking dish in the preheated oven for 15 – 20 minutes.
  7. Remove from the oven, and top the chicken with the provolone, or pepper jack cheese.
  8. Return to the oven, and continue bake until the chicken is cooked through, and the cheese is beginning to brown in spots, about 15 additional minutes.
  10. Plate with some rice, or potatoes (in my case I am using hash browns), and then finish by drizzling some of that yummy salsa on top. Add some chopped cilantro (if using), and a couple of lime wedges. Enjoy.
  11. Keep the faith, and keep cooking.
