This is a chicken salad I invented for The Power of Orange appetizer contest. The oranges and cranberries shine in this easy to put together appetizer.

Ingredients

  • 2/3 c
    pecans, finely chopped
  • 3 c
    chicken, finely chopped
  • 1/2 c
    dried sweetened cranberries, chopped
  • 2
    ribs of celery, diced fine
  • 1
    carrot, grated
  • 1/3 c
    onion
  • 1 small
    can of mandarin oranges, drained and chopped
  • 1 Tbsp
    fresh orange juice
  • 1/2 Tbsp
    orange zest
  • 1/2 c
    mayonnaise
  • 1/4 c
    sourcream
  • 1 1/2 tsp
    natures seasoning or your favorite seasoning

How to Make Orange Chicken Salad Cups

Step-by-Step

  1. Stir together all ingredients and spoon into pre-made phyllo cups, mini sandwich bread, toast points or crackers.
