mom's waistline barbequed chicken
My Mom always kept her figure and her size seldom varied. While she was an excellent cook and baker she would sneak "diet" foods into our meals. Because they were so good we never knew! The only additions I have added are the red pepper flakes and the garlic. I hope you will enjoy this as much as my family does...no bottled sauces for us!

Ingredients
- 2 tablespoons olive oil
- 3 pounds chicken breasts (4-5)
- 3 cups tomato juice
- 1/2 cup apple cider vinegar
- 1 tablespoon granulated sugar
- 4 - medium onions, chopped
- 3 tablespoons worcestershire sauce
- 1/2 cup catsup
- 4 teaspoons prepared mustard
- 1/8 teaspoon red pepper flakes
- 1 - clove garlic, minced
- 1 teaspoon black pepper
- 2 teaspoons salt
How To Make mom's waistline barbequed chicken

Step 1In a deep skillet, heat oil over medium and brown chicken on all sides. Remove to a shallow baking pan.

Step 2In the same skillet, over medium heat, sauté the onions and garlic. Scrape up the browned chicken bits. Add the remaining ingredients and stir to mix well. Bring to a gentle simmer and let simmer about 10 minutes.

Step 3Pour hot sauce over chicken breasts.

Step 4Bake in a preheated 350 degree oven, uncovered, for 40 minutes or until chicken is tender. Baste every 10 minutes with the sauce.
