- 2 medium chicken breast-cooked and diced
- 1/2 medium yellow onion -diced
- 1 can tomatoes, canned italian-style and diced
- 1-1/2 cup jasmine rice
- 2 tablespoons chili powder
- 1 tablespoon garlic parsley salt
- 1-16 ounce mexican blend shredded cheese
- 1 can black beans, canned-rinsed an drained
- 2 cups chicken broth, low salt
- 1-4 ounce canned mild green chilies-undrained

Step 1Add in All Ingredients except cheese. into a non-stick Skillet. Sir to combined. Bring to a boil, then turn down to a simmer. Cover for 12-15 minutes.

Step 2Checking and stirring at least once, making d sure lids stays on and liquid is absorbed. May need to adjust heat so to avoid sticking.

Step 3Sprinkle over top, resume lid to melt cheese, I ,turn OFF my stove. The residual heat should melt the cheese. Dig IN
