  • 2 lb
    chicken thighs, bone-in
  • 1 Tbsp
    oregano, dried
  • 1 Tbsp
  • 1 Tbsp
    garlic powder
  • 1 tsp
  • 1 tsp
  • 1/4 c
    kalamata (greek) olives
  • 1/4 c
    green olives
  • 1/4 c
    sun dried tomatoes, dry packed
  • 1/4 c
    feta cheese
  • 2 Tbsp
    olive oil
  • 2
  • ·
    cilantro, fresh for garnish

How to Make Mediterranean Chicken


  1. Combine the oregano, cumin, garlic powder, salt & pepper in a small bowl.
  2. sprinkle each thigh front and back with the seasoning mix.
  3. place in a plastic bag and refrigerate at least a few hours or over night.
  4. add the olive oil to pan and brown the chicken about 3 mins on each side on med-high.
  5. add in the rind and juice of the 2 lemons, the olives, as well as sun dried tomatoes...cover and cook on medium for about 30 -40 mins...garnish with cilantro & feta cheese
  6. I serve over jasmine rice & pita bread
