Ingredients For mediterranean chicken

2 lbchicken thighs, bone-in

1 Tbsporegano, dried

1 Tbspcumin
-
1 Tbspgarlic powder
-
1 tspsalt
-
1 tsppepper
-
1/4 ckalamata (greek) olives
-
1/4 cgreen olives
-
1/4 csun dried tomatoes, dry packed
-
1/4 cfeta cheese
-
2 Tbspolive oil
-
2lemons
-
cilantro, fresh for garnish
How To Make mediterranean chicken

1Combine the oregano, cumin, garlic powder, salt & pepper in a small bowl.

2sprinkle each thigh front and back with the seasoning mix.

3place in a plastic bag and refrigerate at least a few hours or over night.
-
4add the olive oil to pan and brown the chicken about 3 mins on each side on med-high.
-
5add in the rind and juice of the 2 lemons, the olives, as well as sun dried tomatoes...cover and cook on medium for about 30 -40 mins...garnish with cilantro & feta cheese

6I serve over jasmine rice & pita bread
