margie's curried chicken salad
My friend Margie used to make this for every pot luck. There was never a morsel left, either! This is one of my favourite recipes for summer, being quick, easy, and versatile. Chicken can be freshly cooked or left over. Raisins may be substituted if sultanas aren't available, and you might even try Craisins! This salad can be served in a pita, on crackers, in a stalk of celery, or spread on bread as a sandwich. I like it wrapped in a lettuce leaf for a summer lunch!

Ingredients
- 4 - chicken breasts, boneless and skinless, cooked and diced
- 1 stalk celery, chopped
- 1/2 - onion, chopped
- 1 - apple, peeled, cored and chopped
- 1/3 cup sultanas (golden raisins)
- 1/2 cup chopped cashews
- 1/8 teaspoon salt
- ½ - 1 teaspoons curry powder
- ¾ cup miracle whip or mayo
